  • Yes, a 10% surcharge applies on Sundays, and a 15% surcharge is added on public holidays. Please note that Rustlers has a strict NO BYO (Bring Your Own) policy.

Origins

From Humble Beginnings to a Regional Favourite 

Rustlers Steakhouse & Grill has been a cornerstone of Albany’s dining scene for more than 20 years; but our story truly took shape in 2005 when Chef Les Palmer joined the team. Starting in the kitchen, Les quickly fell in love with the energy, precision, and creativity of hospitality. But more than just great food, what inspired him was the ability to bring people together—locals, travellers, families, and friends—around a great meal.

In 2006, Susie Palmer came on board, bringing her passion for customer care, team development, and the systems that keep a restaurant running smoothly. With complementary strengths, Les and Susie grew into their roles; eventually taking over the business in 2016 after the original owners retired.

Since then, it’s been a wild ride; one that’s included growing our team, mentoring the next generation of hospitality stars, and navigating the many highs and lows of running a regional restaurant.

The challenges of COVID-19 tested our resilience; but they also reminded us of our purpose: to be a gathering place for the community, a training ground for young locals, and a space where visitors feel like they’ve found a home away from home. When cost-of-living pressures and supply chain issues followed, we stayed true to our values; offering fair prices, maintaining quality, and doubling down on local sourcing.

A defining moment in our evolution was the introduction of Stirling Ranges Beef; a premium product from right here in the Great Southern. From that point on, we committed ourselves to showcasing the best of WA: Frankland River Pork; Great Southern lamb; local seafood wherever possible; and wines sourced exclusively from the Great Southern Wine Region.

At Rustlers, we know it’s not just about the steaks (though we’ll put ours up against anyone’s); it’s about the atmosphere, the hospitality, and the people. It’s about birthdays; catch-ups; family dinners; and quiet Friday nights where locals and visitors alike feel equally at home.
